Zucchini Squash Casserole

Zucchini Squash Casserole

  • 1 pound of zucchini or yellow squash or a mixture of the two diced
  • 2 eggs
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup cheddar cheese
  • 1/2 cup parmesan cheese
  • Ritz crackers crushed

Mix everything together except crackers. Pour into a greased casserole dish. Add crushed crackers to top and bake at 400 for 25-30 minutes or till done.

I dice the squash and or zucchini, but you can slice if you prefer.

This is a delicious squash casserole, but truthfully I’ve never tasted one I thought was bad.

We are continuing to enjoy the wonderful bounty from our summer garden.

  1. Hi Tipper and Acorns. TY for the recipe . I enjoyed last night’s video. I’ve been falling behind on reading the posts. I’m just exhausted. I keep everyone here and up Wilson Holler in my prayers. TY you all for Praying foe Ed, me and my sister Nancy. Nancy is in Nashville now at Vanderbilt Medical Center. Her husband Gary is with her. They will be there several weeks/months. She crushed the ankle. There will be lots more surgery. She is a fighter and knows she is in the hands of our LORD. She is ready for whatever HIS plan is for her. I love y’all.

  2. I’ve been making squash casserole overtime this month, we love it! I tried a recipe similar to yours except you replace your crackers with Stop Top Stuffing dry mix, and add some Durkee French Fried Onions to the top, it was so good!

  3. I’m going to try your recipe, sounds yummy. Here’s the way I fix it, if you’d like a complete meal in one. Use large zucchini, wash, cut both ends off. Cut lengthwise, scoop out seeds. Put on a foil lined cookie sheet, set aside. Fry up 1# hamburger and diced onion, drain fat. Make 2 packages of Stove Top (or store brand) stuffing. Mix the cooked hamburger and stuffing, then pack it into the zucchini. cover with foil, bake at 350 till zucchini is tender, uncover, sprinkle mozzarella cheese on top, bake uncovered till cheese is bubbly. Easy to make and very good.

  5. Your casserole sounds delicious. Thanks for the new recipe to try. I love zucchini any way you make it…sweet and savory. Layering slices of it in the middle of a lasagna is a great way to add veggies to a pasta dish.

I also am enjoying zucchini from my organic farm that I shop at…cooked in whatever way one can cook it, including a casserole – one way I do a casserole is zucchini, sliced onions, sliced tomatoes, spices of choice, grated cheese of choice – all done in layers and sprinkled on top with cracker or bread crumb & butter combo. Yours’s looks yummy Tipper – your whole meal looks like my kind of meal!

  8. Good morning, Tipper! Another delicious looking recipe I’ll have to try. With all the rain we’ve been getting the garden is very slow this year. So I might have to buy a zucchini.   9. Oh forgot to say I’ve never cooked zucchini that way as I normally make zucchini bread. Our youngest son bought me a gadget that spirals your zucchini into what looks like spaghetti and then you take that and make it into a salad. I have done that and it is good but you can’t beat Zucchini Bread in my book:)

    1. Dee, I love spiral zucchini with meat sauce and eat it like spaghetti with Parmesan cheese. Yum! And, of course, zucchini bread is delicious too.

  10. Can’t wait to try this. I’ve made recipes similar to yours, but I like that this one has only 1/2 cup mayo and sour cream and no soup! Also the Parmasean cheese will give it a different taste.

  11. Your garden looks fantastic and I loved hearing little Ira talking. He reminds me of our second son who talked ALL the time once he started at a very young age:)

    I grew up listening to grandparents, aunts, uncles and my parents sitting while breaking beans, sitting by a fireplace in the winter, or after dinner, telling stories. They are all in heaven now and I sure do miss them but I can pull up one of those memory files and smile and I will get to see them again one day. God Bless ya all and I’m still praying for Norman and Papaw Tony.

Ritz crackers are fine for the purpose, I suppose, but you might want to try them with Italian breadcrumbs, which you can buy at supermarkets but are so easily homemade that you might just do it yourself. Take your “regular” crumbs and add dried herbs and spices that you associate with Italian cuisine, such as garlic, parsley, basil, oregano, that sort of thing, along with the salt and black pepper. Depending on your heat tolerance, maybe even a few red pepper flakes. Also, if you want to go the whole shot, you can swap out the sour cream for ricotta. It won’t be so tangy, perhaps, but it’ll be more “Italian.” Ricotta is not all that difficult to make either, being just basically heated whole milk that’s been soured and curdled with lemon juice (that’s the shortcut method). Recipes for making crumbs and ricotta are plentiful online.

  13. The recipe I use is similar to yours, but I don’t include Parmesan cheese. That’s my favorite cheese, and I plan to add it the next time I make the delicious casserole. My friend tried some of the leftovers I had not yet put in the fridge and ranted and raved about it, saying it was the best food she had ever eaten. I told her, “It was much better when it was warm.” However, she replied that she didn’t want to eat it warm because she was afraid she might founder.

  14. Yay!!! A new zucchini/squash casserole to try!!! I have my go to that my grandson loves, but I’m ready to branch out 😀 I’ve made a dozen loaves of bread thus far. Last evening, after a birthday lunch with my granddaughter, Taelor(now 23) and my great granddaughter, Hazeleigh (13 months as of yesterday ♡) I made 2 different cucumber salads to share with my grandson. Yes, he is my veggie eater and loves it when Mommer’s yarden started producing! My youngest granddaughter loves cucumbers and tomatoes but only zucchini in a sweet confection.

    Tipper, I was so impressed by your big garden makeover. This time of year, to tackle a laid by patch that large is quite an undertaking. Kudos to you and Matt!

    Taelor, her boyfriend and baby Hazeleigh are heading north to Wisconsin for a vacation with his family today. Please pray for safe travels there & back and as their young family enjoys this time. I’m taking Josie back to to dentist today for a quick follow-up from last week’s infection pain. Thank you again for your prayers for her relief. They were answered ♡ My grandson, Trestin (24) has been in his new (to him) little starter home for over a week and is still walking on air with joy and pride. He is the “baby” in the neighborhood but he’s always been an old, sweet soul so as he’s meeting his neighbors(all late 60s – early 80s) he’s being welcomed with loving arms, tomatoes and lots of advice lol He’s just 10 minutes from me but I love knowing he’s got a whole bunch of would be surrogate grandparents around him! He’s already weedeated Shirley’s driveway culvert. Blessings Acorns and try to stay cool!!

  16. Well, now I’m hungry at 7:30 in the morning…for of all things squash or zucchini–specifically THIS casserole! And I agree, I’ve never had a squash-based casserole I didn’t like! Nothing like summertime eating and that plate looks amazing! I see the corn’s in and it looks great, too! Enjoy the bounty!

  17. I will eat “casserole” dishes such as this but have never cared much for them. Blame it on my childhood, I never ate anything like this as a child only later on in my adult life. I still dearly love eating the simple food most of it grown by us like I did when I was a child. As a child I never set down to a breakfast of cereal (cornflakes or toast) it would usually be homemade biscuits, grits not oatmeal, scrambled eggs and some type of pork meat 7 mornings a week. Mother along with Daddy’s help would get up early enough to cook this before I left for school and Daddy for work. I don’t remember eating pancakes or waffles. My life time favorite food for breakfast is fried out fatback or streak of lean meat, homemade biscuits and gravy made from the grease of these meats called hunky doo gravy by my family. A slice of home grown cantaloupe would be icing on the cake. I would ask for this as my last meal if I was on death row before be executed. Eating a southern hotdog (wenny, mustard, chili without beans , ketchup and onions an option, was considered a “special occasion” food. I wrote this after just now reading the old post Foods that take you back to childhood.

  18. I’ll have to try your recipe, we like zucchini and yellow squash and I bought a zucchini so that I can make Ratatouille hopefully today. That is another excellent recipe to use up the summer bounty from the garden.

    1. Norman, I’ll be channeling my most positive thoughts and prayers your way, this Thursday! I’ve had CT scans every 3 months Since Dec of ’24. I don’t always like the news but I’m so grateful they show the doctors what they need to keep me as healthy as possible ♡
