Baked Whole Chicken

Baked Whole Chicken

  • 1 whole chicken
  • 1 onion, quartered or chopped roughly
  • 4 carrots, chopped
  • 2 potatoes, quartered or chopped roughly
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil
  • ½ lemon
  • 1 or 2 rosemary sprigs

Place vegetables on the bottom of a roasting pan or Dutch oven in a single layer. Stir spices together. Pat chicken dry and then rub with olive oil. Spread seasonings over the chicken. Place lemon and rosemary in body cavity of the chicken. Cook chicken in 450-degree oven for 15 minutes and then reduce heat for remainder of cooking time to 350 degrees. After the first 15 minutes you will need to cook 20 minutes for each pound of chicken. Since this recipe involves a fair amount of prep and cooking time, you will probably want to choose a large baking hen for use. Cover can be removed during the last 20 minutes of cooking to crisp up the skin.
TIP: Leftovers can be used in a variety of ways. The chicken soup recipe elsewhere in this chapter is one example.

This recipe takes a little time to put together, but once it’s completed you have an entire meal in one pot. The chicken comes out very flavorful and tender—so do the vegetables.

We’ve eaten it with cornbread, biscuits, and homemade bread. I think they all go good with the meal.

  3. This meal looks so good Tipper. I eat a lot of chicken, usually roasted like this, portion out when cooled, freeze for various meal making as needed, including diced into a gravy for over biscuits or mashed taters. My prayers are ongoing for Granny and you all. Big hold-you-tight hugs.

  7. i’ve recently started doing whole chickens in the air fryer using my 8qt instantpot with an aftermarket air fyer lid, and they come out the best ever. it will be interesting to see how the veggies at the bottom do.

  8. Tipper, I have had Granny, you and the other family members on my mind ever since reading yesterday’s post. I don’t have any magic words to say that will help, saying I am sorry or even I am praying for you does not seem to help very much in times like this. I wish there was something more I could do. Thirteen years ago today our daughter died from injuries in an ATV accident. Many kind words have been said to me and her mother, none of them took the hurt away.

    I hope this will bring a brief smile to you, I plowed some with my tractor Saturday afternoon, all afternoon I was thinking about hornet nest and yellow jackets after reading your post and the comments about hornets nest and yellow jackets.

  10. When those who are so precious to me have gone home to be with the Lord, I wasn’t a bit sorry for them. But oh how sad I was for me. Left behind, again! At 74, home looks sweeter and sweeter. The pig and the acorn and your whole family has been such a blessing and comfort to me over these last 3 years. The Lord blessed me with your channel when my husband was dying from cancer in the VA. I thank the Lord for you all and may HE comfort you as only HE can.

Teresa, I couldn’t agree with you more, it is just like an older man at church told me after my wife died, “we know our Christian love ones are in a better place, it is the ones they leave behind that are suffering, hurting and missing them.” I am 71 and often find myself at times feeling like I wish I could go to sleep and not wake up, but I realize she wouldn’t want me to feel this way and I have three precious boys/men to keep trying to go on for. My life as I once knew it was completely destroyed when my wife died, now one of the few bright spots in my life is the BP&A and the members, I look forward to each day’s post and truly appreciate everyone putting up with me.

    I don’t post as much as I used to, maybe it will come back around to me. I wanted to tell you I’m so sorry Granny isn’t feeling well lately. I pray God’s love and peace to her, and all of you.
