
I have several zucchini bread recipes in my collection and I like them all. Recently I was flipping through my handmade cookbook and saw one I hadn’t made in a good long time. Since I had two big zucchinis laying on the counter I decided to whip up the recipe.
Zucchini Cake with Coconut
- 3 cups shredded zucchini drained well
- 3 eggs
- 1 1/2 cups sugar
- 1 cup vegetable oil (or whatever you prefer)
- 3 1/2 cup all purpose flour divided
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 teaspoons vanilla
- 1 cup chopped nuts (I like black walnuts, pecans or slivered almonds)
- 1 cup shredded coconut (I use sweetened)
Mix eggs, sugar and oil.
Sift together dry ingredients (keep out about 1/4 cup of flour). Add to mix.
Mix in vanilla and zucchini.
Toss nuts and coconut in flour and then mix into batter.
Pour into two greased loaf pans and bake at 325 for one hour or till done. Cool 10 minutes in pan.
The bread is delicious straight out of the oven with a glass of milk. We also enjoy a slice toasted with a smear of butter for breakfast or a quick snack.

I love zucchini bread. I have made a plain one, peanut butter, and a chocolate version too…but never tried coconut…yet. I have some because I just bought a couple from a local farmer’s market. Our “porch garden” is doing great. We have lots of little tomatoes and cucumbers growing like crazy each day, and the plants look so pretty through the railing. Ira was just adorable in your video last evening. He’s so interested in everything you show him.
I don’t care for zucchini but love zucchini bread and hope to try this recipe out..
Miss Tipper, I to am going to try the zucchini bread, always one of my favorite foods. Do you think I could do this bread without nuts or the coconut? I’m not able to have either one. Coconut in zucchini bread? I had to screen shot the recipe because I’m certain it’s a delicious take on zucchini bread. I dug potatoes several days ago. I have 12 bagged potatoes growing to be dug next. I canned 6 pints of green beans yesterday. I’ve got a bunch of fresh tomatoes-be they ugly, they certainly are delicious. We like Cherokee purple because they seem to be sweet and not so acidic as some. There are nice banana peppers coming in too. I’m hoping on planting a pumpkin plant, huckleberry plant and a flower after the moon waxes. I learned from experience not to plant much under waning moon. I’ve hosted robins and barn swallows (6 babies that all made it) and yesterday I saw 2 hummingbirds traveling and dining together which I don’t think I have ever seen. My gourds are just lovely climbing the fence looking like green soccer balls and the blooms have been gorgeous! I’ve got several types. I put them and green beans together so it’s a crowd. Sunflowers are delightful and cheery too in the garden. I got volunteer corn that ain’t doing much. (I guess from chicken feed.) It’s delightful here on the farm and I’m so thankful I’ve found my fortress of peace and joy…
Hoping to make this treat this week. I’m helping my parents care for my grandparents and this will be the perfect treat for them to go with their morning coffee. Thank you for sharing

I’ve never had zucchini bread with coconut, but it sounds delicious. Any recipe with an hour bake time will have to wait until we get through this heatwave. Thanks for sharing.

Kraut. We plan to put some up in jars today. When you say in the video that you leave
it on the porch until the weather cools.. Is there a visible way to tell when the kraut has
stopped workin and it is good to bring it in and shelve it? I know you said if it is warmer it will work faster and if it is cooler it will work slower. Going to be 102 here today so back porch will be very warm. I did understand that you still put the lids and rings on finger tight and that is how you do them before they go to the porch right? I was not sure if when they do their working if they would cause the jar to blow up due to the fermenting going on. Thanks as always. Gary Cooper – Yukon Oklahoma
You can open it after about 2-3 weeks and taste to see if it’s to your liking 🙂 Yes I put the lids on tight. Sometimes a little liquid seeps out, but I’ve haven’t had a jar explode yet 🙂
Good morning, Tipper!! I baked 2 loaves of zucchini bread yesterday and have plans to bake 2 to 4 more, today. Bountiful is the word of the season♡ The Cherokee purples are proving to be prolific in the early part of its inaugural season lol I’m enjoying them immensely!! I’m going to share a few with my former son-in-law. He’s quite intrigued by this beautiful new tomato I’m growing. I shared the background story of finding you and your family on here and the BPA. He really got a kick out of Matt and his excitement over his first tomato sandwich of the season. Got up a bit earlier than usual this morning and have wandered around in the garden in my jammies haha soaking up the beauty and early morning sounds. I got all of this mowed last evening and the only thing marring this day is the haze of smoke from the wildfires up north 🙁 We are under an air quality alert here is west central IL. As always, prayers for those in need and a special nod to Papaw Tony. Here’s to a good week to all!

Please say a prayer for my sister Nancy, she had an accident with her tractor while mowing the tree farm. She has had 4 surgeries so far. They will discuss the need to amputate her foot today.
