The cookbook Jim Casada and I published is filled with favorite recipes from his family and my family. While we’re both very familiar with the recipes we chose for the cookbook, neither of us have made all of each other’s recipes.

I want to try all of Jim’s and recently made his pumpkin bread. Here’s the recipe.

PUMPKIN BREAD

2½ cups sugar
1 cup shortening
3 eggs
15 ounces of pumpkin
3 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
1 teaspoon baking powder
1¼  teaspoons cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
1 teaspoon allspice
1½ cups black walnuts

Combine sugar, eggs, pumpkin, and shortening. In a separate bowl sift together flour, salt, baking soda, baking powder, cinnamon, cloves, nutmeg, and allspice. Combine pumpkin mixture with sifted mixture. Stir in black walnuts. Pour into greased loaf pans and bake for an hour at 350 degrees.
NOTE: Other nuts may be used; pecans are especially good in this recipe.

The pumpkin bread is so good!! It is very similar, if not the exact same as the one Granny uses—except the nuts. Granny uses pecans.

I really love black walnuts so it’s not surprising that I would like them better than pecans, but I found it interesting that my family thought the bread was out of this world too even though they are not black walnut fans. I believe the black walnuts add more of a richness than pecans. And that rich earthy flavor of black walnuts really compliments the spices of cinnamon, cloves, nutmeg, and all spice.

  1. I think I might try making this as muffins, and adding nuts to only half the batter so I can share with my Occasional Helper and his family – he is allergic to nuts. But I’m not!

  2. I use oil in my Pumpkin Bread and also in my Banana Bread and it’s much better than butter or shortening! It is so moist and slices so nicely. I used to use shortening and it was just to dry.

  4. Pumpkin bread is one of my favorites, but I always use pecans. Would love to try it with black walnuts but around here, you can’t find any. I bet the flavor of the black walnuts with the spices really is delicious.

  6. This comment is for both 13 Soap and Tipper. First I have had what what seemed like a pickup truck load of black walnuts go to waste during winter this year, I couldn’t give them away. The squirrels have enjoyed eating them. Watch a squirrel crack black walnuts it will soon learn why when hunting them you don’t pick one up until you know it is graveyard dead. I know there is a lot of work in cracking and picking out black walnuts. My grandparents would sit around their wood/coal heater during the winter days and nights cracking and picking out black walnuts and pecans grandmother would use in her cakes. They never owned a TV. I read this on a local news channel website this morning, South Carolina is the only state that has not had any snow so far this year, even the panhandle of Florida has had flurries. I find this hard to believe because I would think the northwestern counties that border NC would have had a few flurries.

  7. The pumpkin bread looked wonderful but I’m like Matt, I’m trying to cut way back on sugar. It sorta makes me not as lovable as usual:) One thing for sure, I know you are going to love those planters that Matt put together for you. I’ve mentioned before that my son bought me three planters that actually stand with the bed up to my waist. What a treasure they have been for me as I don’t have to bend down to plant or harvest and what a bounty of goodness they have produced. The perfect place helped, as they stand right by the side of my patio. Plenty of sun and I have a hose to water right by if I need to use it.
    I must say too your greenhouse rock floor looks so nice!
    So glad to hear Granny is doing well, I’ve kept her on my prayer list and the girls too!

  8. Tipper, I made this pumpkin loaf for my quilting ladies, and they all raved about it! It was delicious, I’ll definitely be making it again. All the recipes I’ve made so far from your cookbook are so good!

  9. The pumpkin bread recipe sounds easy to put together and looks even better. I’ve got a big bag of black walnuts I picked up that is just sitting on my back porch waiting for the right recipe. Still praying for sweet Granny every day.

  10. After I saw your video the other day, where you made banana bread and put black walnuts in it, I was a copycat! Usually I leave nuts out, but black walnuts are the blacksmith’s favorite. Of course I had a good supply in the freezer. He appreciated me watching your video!

    FYI, Missouri is the largest Black Walnut supplier.

  11. My grandmother often used black walnuts. To me, their taste was miles apart from regular walnuts & meant there was a celebration in the meal.
    In August, she’d make my mother a cake and a lemon curd topping with black walnuts for her birthday. Added to the curd was the said black walnuts, chopped.

  13. Tipper, Jim’s Pumpkin Bread recipe looks awesome, I will have to try fixing this Pumpkin Bread recipe. I wanted to ask if I could cut down on the amount of sugar it calls for in the recipe? Thank you, Tipper, for posting this recipe. Keeping Granny and the Wilson and Pressley families in my prayers.

  14. The cookbook is a keeper and blessing to any well run home and kitchen! I’ve made a few of the breads and they’ve all been delicious! What most surprised me is after “setting up” overnight, the walnut bread actually tasted BETTER and over a few days it just got more flavorful and tasty! If you have a wedding shower coming up, graduations, baby showers, birthdays and of course MOTHERS DAY OR FATHERS DAY, this cookbook would be a literal godsend for a young cook looking to go EXPERT! Every thing I’ve made from the cookbook got rave reviews from guests! And I learned after about 4 loaf pans of bread, a TUBE PAN is another way to say BUNDT PAN…. I kept wondering why I needed 5 or 6 cups of flour and man did I find out! Lol. (Tipper, maybe it would be an idea to place a tiny dictionary in the cookbook describing what some unfamiliar terms mean like tube pan.) I’m a hillbilly, but I had no mentor to teach or show me anything much in the kitchen. Mommy was old and in bad health by that time. I learned to cook when I decided to become a homemaker after I got sick of playing war, games and guns with Uncle Sugar… for some of us the journey is painful and the learning difficult… lol God bless you all this day!

    1. Sadie–I think that black walnuts have the ability to add flavor, over time, to a lot of things. Momma always made her applesauce cakes, which were chockful of black walnuts, on Thanksgiving weekend. They were strictly off limits until Christmas time, which meant the nut meats had a month to spread their flavor while the cakes sat in a cold room or on the porch, getting an occasional dollop of apple cider to keep them moist but otherwise untouched. That recipe is on pages 199-200 of our cookbook.

    2. Bundt pans are fluted tube pans. There are several bakeware manufacturers that make other similar fluted tube pans but cannot use the Bundt trademarked name. All Bundt pans are tube pans but not all tube pans are Bundt pans nor are they all fluted. “Tube pans” are a collection of different shaped cake pans that are characterized by the tube in their center which helps the cake to bake from outside in but also the inside out.

  15. I watched you make it and it looked so good. I would use the pecans though as I’m not fond of black walnuts. I do remember getting black walnuts stains on my hands when the kids in the neighborhood would raid ol man Jackson’s walnut tree. He didn’t care at all.

  16. This is the first year I was unable to find black walnuts in a grocery store. Finally, I had no choice but to order them from Amazon. And they were not cheap! But their unique earthy taste cannot be duplicated. I have seen black walnut oil, but it, too, is dearly priced.

    After making a lot of pumpkins breads and being given so many, I have settled on two recipes that, in my opinion, “take the cake.” One is from Smitten Kitchen and the other from America’s Test Kitchen. http://www.kitchenbounty.com/2022/10/pumpkin-breads-toppings-glazes.html

    Looks like we here in NC won’t be getting any snow. I know how you have pined for some; not me.

    1. Earthy is the perfect word to describe the unique taste of black walnuts! To me, they even smell like wet earth. It takes a very determined person to break through their strong defense wall. I did it one year as an adult, driving my car over them several times before I started using my hands and various tools. I am really glad that I never developed a taste for them. In my family, they appeared only once a year – in divinity, which I also don’t care for. I am happy that the Lord provided good-tasting nuts that don’t require nearly as much of a challenge to obtain. I do love the trees, though.

      This is the 2024 snowfall totals from Avery County, North Carolina as of Jan 15 2024. Alleghany, Ashe and Watauga have also reported decent snowfall.

      North Carolina is getting snow for sure. You just have to know where to find it.

  17. Ya’ll have me so excited for Spring and planning the garden. My husband and I were just talking about building a greenhouse so we can start things earlier. I just can’t wait for getting things planted.

  18. The pumpkin bread recipe looks yummy. I love trying new recipes and I love baking…the trouble is that I then eat it. Lol! I watched Matt build your new raised beds last night. You guys are making me want to get out and work in our garden, but ours is still covered in snow. It is fun to plan and decide what we will plant this year though. Our favorite pepper from last summer was hot cherry peppers. So, we are planning to grow lots more of those. I canned various pickled hot peppers and peppers in sauce, and the ones with the hot cherry peppers were, by far, our favorite. Thanks for the updates on your Mama. I also enjoyed the videos the girls have done about updates and getting ready for their babies…very exciting times at your house. Take care everyone!
