A couple of weeks ago I was hankering for a taste of fall of the year. My mind immediately went to pumpkin.
I knew I didn’t have much time to spend on cooking so I went in search of an easy quick pumpkin recipe.
I found one that used puff pastry.
Puff pastry bakes into flaky layers. You can make puff pastry from scratch and I’m positive it would be so much better than store bought, but store bought is the only kind I’ve ever used.
I found the pumpkin danish recipe here. It’s one of those recipes that is so easy you can switch it up in a variety of ways. I know swapping the pumpkin for applesauce or other fruit would result in something just as good as the pumpkin danishes turned out. Since we adore cream cheese I added a small amount to my pumpkin mixture to make it more creamy.
I’m having a hard time believing November starts this week. Before you know it I’ll be eating pumpkin pie for Thanksgiving. This year has went by faster than any I can remember.

Tipper or any other readers out there, does anyone remember a children’s number-guessing game played with two players and each player with a hand-made grid, called “Going to the Mill”? I grew up in East Tennessee and have been teaching it to my granddaughter who loves it, but I can’t remember now where I learned it, from my two-room school back in the early 1950s or from a relative (deceased now). If anyone has information, please pass along to Tipper, and I would love to hear from you, Tipper, if you come up with anything. from Lois

Thank you Tipper! This is a good way for me to use leftover pumpkin from my favorite pumpkin cake recipe. Why they can’t put two even cups in a can of pumpkin puree I don’t know.
Sounds yummy Tipper! I can’t believe Halloween is tomorrow…the holiday madness has begun! Halloween, Thanksgiving, Christmas, then new years will be gone in a flash! Plus my birthday is less than 2 weeks before Christmas. I swear the time passes faster every year. Seems like it was just a few weeks ago that I was tickled to death to see the first leaf buds appearing on the trees and here we are watching those leaves drift to the ground.
I’ve used puff pastry from the store before. It’s good enough especially when I consider how long it takes to make it from scratch. My life requires shortcuts in the kitchen. I’ve made baked apple hand pies with the puff pastry and they’re really delicious, much more healthy than fried. I’ve used the phyllo dough too but it’s a bit fussy so I rely on the puff stuff.
Question for Tipper? I watched your vlog where Matt was tilling the green bean beds. How in the world did you get such a high-up video??? You could see it from way up there but the camera didn’t seem like it was on your house!

I LOVE PUMPKIN!!! There, I said it….pumpkin everything! I can’t wait to make this pumpkin danish. I get a hankering for pumpkin even in the summer and I make a pumpkin something or other and freeze part so I can get it out when that hankering comes again! Love to all of you and Granny, too. Looks delicious! Yes, I too feel that time has flown by and hard to believe this week starts November. They say as we grow older this time thing really goes by in a flash…I believe it now!!! Prayers for ALL 🙂
Well as I was told I was a diabetic now, I still can make these for my family. They look delicious. I know it gonna be very tempting not to snatch one. This definitely be a fall food. Setting drinking a good ole cup of coffee and eat a Danish. Thanksgiving is just around the corner and then Christmas.
I’ll pass on the punkin puffed pastry. Punkin is probably pleasurable to a plurality of the population but less than palatable to me. A piece of cold cornbread and a bowl of pintos, please, if you have it.
I can eat pumpkin but it is not my favorite, I do like pumpkin rolls. Not pintos but I ate some colored/speckled butter beans cooked with a chunk of fatback and cornbread over the weekend. I was raised on food like that and I have never tried to get above my raising. Some sallet or turnip greens would have been good to go along with it.
Now I know we are cousins, for sure!

Good morning, anything pumpkin gets gobbled up at our house. We don’t have a garden, but loads and loads of leaves, got most of them raked up before the 5 inches of snow arrived yesterday. Praying for Granny. Have a blessed week.
Pumpkin danish sounds good! I need to replenish my frozen pumpkin supply since I’ve used just about all mine I had froze last year. I agree this year has went by very fast and October has been the fastest month ever to go by. I guess it’s true the older we get the quicker time goes by. Everybody have a great week!
Looks good, makes a fella hungry! I have a news bulletin for all of you younger members, time just keeps going by faster as you get older. Now it seems like a year is only half as long as it did when I was younger. Like Brenda T said freezing temps of 30 degrees forecast for Tuesday night and the rest of the week with a very small chance of rain tonight. Last night the weatherman said our area is now considered to be in a severe drought after having above average rainfall during the first part of the year. If Tipper has not already did it, she will get to build her first fire of the year for this coming winter.
Good show last pm. Very relaxing. Maybe I can try making a pumpkin roll. We are praying for rain in Alabama. Looking forward to some cooler temps too. Prayers for Israel
Good morning Tipper. The pumpkin danish recipe sounds yummy. I like anything with pumpkin or apples in it, especially in the fall. Your video last evening was very enjoyable. It’s relaxing to sit and watch. My husband has already plowed our garden under once this fall, except for where our pepper plants are. We agree that it’s a good idea to till it up a few times to get rid of the bugs and make sure they freeze. I think there’s gonna be a good freeze by Tuesday night here. The little “trick or treaters” had better dress warm. I make several treat bags filled with candy and little toy treats in anticipation, but the last few years I only get about 6 or 7 trick or treaters—and that’s including my two grandchildren that live close by. When my kids were little, I always made homemade pepperoni rolls on Halloween so I could have time to take them out and walk around the neighborhood. I still continue that tradition—My house smells so good that night. Sometimes I invite the parents in for a hot pepperoni roll since I always know who is at my door. Have a wonderful week everyone! Puff pastry is a thing I made once, just to have done it, but have bought every time since. It DID taste better, but not better enough to make the faff worth it .
Your pumpkin Danish looks very tasty. I will be trying this recipe! My husband and I were just discussing how we can’t believe it’s almost Thanksgiving. Time flies!!

I’m sure those puff pastry treats were delicious. I have used those pastries but not for the recipe you mentioned.

This sounds so good! I will be trying this for our family. I made the apple walnut cake from the cookbook and it was sure a big hit with our family. It’s been requested again!
