Elderberry Fritters

Mix a sweet pancake batter in a bowl large enough to cover a flower head of Elderberry. Holding by the stem dip the flower in the batter. Place in medium hot oil to fry. When ready on one side, clip the stem and turn it over to fry the other side. Lift and drain on paper towels. Serve with honey, elderberry syrup or simply sift powdered sugar over the flowers.

I really enjoyed the elderberry flower fritters Ila made for the class. Over the weekend I sort of made them for Matt. We were cooking outside by the creek so I just made little pancakes and laid a flower in each one. They were good, but not near as good as Ila’s. It was nice to snip the flowers growing right by the garden and then enjoy them as part of our breakfast by the creek.

  1. We would pick elderberries and eat them as a kid. I love them and think pancakes with elderberries tossed in the batter would be delicious. My mama made the best elderberry jelly. It is my favorite. I never see any growing around here. I wonder if the bushes we picked from as a child are still there. They grew right in front of an old blacksmith shop which has been long gone years and years ago.

  6. That is so neat that you recreated a version of the elderberry fritter you had and ate it by the creek! I hope there is a video accompanying that meal. What a rewarding outdoor morsel of goodness after working in the garden. Last night the whippoorwills were really singing here. It made me think of you and many other members who have talked so fondly about that nostalgic nighttime sound.

    Tipper, losing the sweet potatoes cracked me up!!! I live peacefully by myself on my little spot of heaven and when something like this happens, and it’s rare, but it does happen and I’m truly baffled. They could very well turn up in a very odd spot and that will probably confirm your “suspect”. I’m growing a small patch of potatoes this year and if the tops are any indication, I’ve got a bumper crop but as you and Matt were saying…I could be in for a shock. The seed taters were only $1 so my risk is low haha. When I was watching your folk school video and you said you ate elderberry flower fritters…I thought it was made with elderberry FLOUR! Another haha moment for me as I continued to listen and watch. Breakfast down by the creek sounds devine!!! Have a wonderful week and as always, Papaw Tony is in my heart as I pray for you all as he goes through treatment.

  8. I find that when I make something new that someone else had made first it never seems to taste as good as theirs…someone can make me a boloney sandwich and even something that simple still will taste better than mine. lol
    Saturday night I do not know what went on around my neck of the woods but when I woke up my four o clocks were laid over and my hardy hibiscus instead of standing straight up were seriously trying to lay over. The four o clocks just made me sick because after trying for 3 years I finally got a red one and a yellow one to grow and were blooming prolificly, so pretty, a third one is growing and did not get laid over as it is a little smaller than the red and yellow and has not yet bloom–I really hope it is a pink one mainly because I think that as pretty as the red is the pink should be gorgeous. The yellow is certainly pretty on its own right but the red is just shockingly beautiful so I am reasoning the pink will be also if that is what the third plant is….I planted one other color but can not remember what it is. This was all from seed, not bedding plants so I am especially pleased with God blessing me this year with them especially after three different years of trying and multiple planting of the seeds each year. My grandma had four o clocks in a brick planter my grandad had built here on the south side of her country grocery store and they were huge like boxwood bushes…so pretty. I planted these in honor of her. Of course I will not live long enough to see these get as big as hers but I know whoever lives here when I am gone will surely enjoy them as much as I am.

  9. Well it’s good to know that the Elderberry flowers are eatable and one can make fritters from them. I’ve yet to try the fried squash blossoms, but lots of people say they are delicious. I’d like to try them both one day. I can imagine both are very tasty.

  11. elderberry flowers, that must be those white flowers I see down by the creek, they have not made berries yet, I’m going to the heart doctor today, pray for my visit, that I get all questions answered, and everything accomplished, God bless you dear friend thank you for praying for me, thank you for praying for my brother Bennie during his battle with cancer, he went to be with the Lord on April 6th, thank you for praying for me and please continue to do so
