If I’m needing to fix a quick breakfast or supper one of my go to meals is scrambled egg sandwiches. Like many people I’ve eaten them my whole life.
I don’t recall how old we were, but one time we were eating scrambled eggs and Paul told me “You know when momma makes eggs they’re like little pieces of eggs when daddy makes eggs they’re like big blankets of eggs.”
I had to agree he was right. There was a big difference in the way Pap and Granny made scrambled eggs, but both were good.
The popularity of scrambled eggs means everyone has a different way of cooking and eating them.
I like the blanket type that Pap made and I always want bacon to go with mine. I also prefer my light bread toasted with mayonnaise.
When The Deer Hunter and I were first married I was surprised to see him mix his scrambled eggs with mayonnaise in a bowl before putting them on un-toasted light bread.
These day’s he eats his scrambled eggs with bacon on toasted bread with mayonnaise like I do, but he likes to add hot sauce to his.
In the summer we round out our scrambled egg sandwich with a slice of tomato from the garden. In winter I usually cut up an apple or other fruit to go with it.
Scrambled egg sandwiches are not only tasty and filling they bring comfort to me when I eat them. Likely because of those little egg pieces and big blanket eggs I grew up with.

Is there any truth in the rumour that hens are not laying as many eggs as usual and that there is a shortage in some parts of the U.S where I’m told supermarkets are charging up to $10 a dozen. Here in the UK there are not as many on sale as usual, but that seems to be more down to the cost of producing them ( feed costs doubling along with electricity which has rocketed ) rather than anything else.
Mel-I can only speak to our hens, they are laying as usual 🙂 I think the price of eggs varies depending on where you live in the US and what brand of eggs you’re buying. I get Granny’s groceries for her and I have noticed the cost of the eggs she buys has risen by about 2 dollars in the last couple of months. Enjoy your day!
We eat breakfast for dinner at least 1x a week (dinner being at noon LOL). My husband works an afternoon shift 4pm – midnight, but often until later. He doesn’t get up until 10am and we eat our main meal all together at noon. He often doesn’t want something like kielbasa & sauerkraut right when he gets out of bed. I have one daughter that is not crazy about eggs and we wonder where she came from???? Us other 3 love them any way they are served! We raise chickens & now are starting to get a bunch of fresh eggs. We didn’t eat eggs often when I was a kid, because my mother hates eggs & didn’t like to cook them. Anything she doesn’t like to eat, she doesn’t cook – its quite a list LOL. My dad would make something called a Western Omelet. It has diced ham, onions, peppers and was cooked all in one cast iron pan shape. It is delicious with ketchup. I make it for my kids every once in a while and it always makes me think of my dad. It was literally the only thing he could/would cook.
The only way i want eggs is the way my mother ‘scrambled’ them; right before they solidify, stir them gently until they’re barely solid. Then you can see the yolk & white. These breakfasts where they pulverize them and then cook them to rubber consistency – YUK!!! Intolerable. Sometimes i put a little ketchup with them. They need some really crisp bacon or real spicy sausage patties along w/ buttered grilled toast too.
I love fried egg sandwiches or scrambled egg sandwiches (sometimes with cheese on them) & fried diced potatoes together. Actually I have eaten an egg sandwich & fried potatoes twice in the past week for supper. I sometimes fry onions in with my potatoes. Do you ever do that? Guess I’m weird because I put mustard on my sandwich. Never liked mayonnaise very much. Also, do you know how that young lady that Katie told us about that had an aneurism is doing now? I have been praying for her since Katie shared that with us. I think her name is McKenna-could be wrong.

The story of your experience giving birth to those wonderful daughters was fascinating. You and Matt were truly blessed. It’s clear that they continue to be a delight.
My wife has a similar tale about her pregnancy. She had 4 of the 5 indicators of a high risk pregnancy: age (41), previous history of miscarriage (3), Rh factor incompatibility (Neg.), breech presentation. She too had a stitched cervix and wore a monitor, but she went full term and delivered by C-section. Like Matt, I was there for the surgery and removal of my precious daughter. Unlike you and Matt, we didn’t have to travel for 4 hours to see the doctor, fortunately.
Eggs: A blessing from God. I eat them every way I’ve ever seen them prepared including raw. I prefer them fried over very easy or poached on a wedge of toast but I frequently eat them hard or soft boiled. Yummm.

Scrambled eggs with chopped parsley and/or chives for me! Also sometimes put a teaspoon of cottage cheese in the mixture to make them creamy. We have big shortage of eggs in NZ at the moment though so use them sparingly.
That is so funny! Paul really paid attention to his food, noticing the difference in Pap and Granny’s eggs and then didn’t he always say your grandmothers potatoes looked like little boats!? I just eat them up! My Maw Maw liked mustard with her scrambled eggs, so I will eat them like that from time to time!

Interesting, I’ve never heard of putting mayonaise on an egg sandwich. We’ve always just fried an egg hard and put it on plain or toasted bread. Sometimes we’ll put on bacon and some jelly.
I’m right there with you, Tipper. LOVE scrambled egg sandwiches, and I’ve always made them the way you like them. But, with my love of mayo, I’m very intrigued by the way the Deer Hunter used to eat his. I might try that sometime! My husband will probably think I’m nuts! LOL

I grew up on fried egg sandwiches, but I love to fry up some ground sausage, drain the grease and add in eggs. I like them mixed together with toast on the side. You can’t go wrong with some good eggs!! Tipper, thank you for sharing your birth story. The good Lord knew to send those twins to you and Matt. What you went through to get them here is a miracle. You and Matt have been truly blessed by them. I love the picture the sweet lady took of ya’ll before you came home. Priceless!!
When I was growing up my older brother and I always put ketchup on our scrambled eggs…until a bad decision at a sleepover during my teenage years ended that tradition. My friends got their hands on a copy of the movie “faces of death” and there is a terrible scene with people eating monkey brains straight out of the poor little monkeys head. Yep that ended the ketchup on scrambled eggs for me lol. Now I like mine with lots of pepper and jelly on the side!
I ate a lot of fried egg sandwiches as a child but they were never scrambled. My husband won’t eat an egg sandwich of any kind, let alone for supper. He was one of those picky eaters that many a time went without a meal because he didn’t like it when he was a child as his mama didn’t cater to that nonsense, lol. I came from a home that was pretty poor so you didn’t turn your nose up at anything.. Blessings, have a great week!

My mom always scrambled eggs in the grease from bacon or sausage, and they were so good. I went into the hospital as a child with Pneumonia where they served sunny side up, and for the longest time my mom had to try to get my eggs perfected with the yolk intact. I wonder why she just didn’t tell me to fry them myself, but guess I was playing up the Pneumonia to my advantage 🙂 I watched the video about your twin babies, and you are so fortunate to come through that so well. When studying OBGYN in nursing school, I learned how our bodies suffer unbelievable stress during pregnancy and childbearing. It is a terrible insult to all body systems. Later in life studying genealogy, I am saddened by how many young women in my ancestry just did not make it through childbirth. The Lord’s guiding hand was indeed on you.
I am the odd duck who does not like eggs! It’s a texture issue for me! But when we were building our house I made hundreds of scrambled egg sandwiches to take to the workers. We live rurally and the closest restaurant was miles away and sometimes they wouldn’t come back. So I started making their lunch just to keep them on the job!
I have been a vegetarian for a few years now. Eggs are very prominent in my diet. My husband scrambles eggs like Granny. Mine are more like Paps. With the cost of eggs now -I feel like I am buying the most expensive cut of beef. By the way, I will eat a good piece of bacon when I get the opportunity! Take care and God bless ❣️

We usually do our scrambled eggs in the microwave for breakfast sandwiches, I put an assortment of things in mine, have been doing them this way for a few years now.
Our Sunday night church us too early to eat beforehand and too late to eat afterwards. So scrambled eggs is a good compromise. I like the blanket kind best so it will make a sandwich if I decide to. And yes, I like the hot sauce, not a lot just enough to bite back a little because eggs alone really don’t have a flavor to speak of. But I have been noticing lately that tastes change like so many other things. Can’t blame all of it on the virus.

Sure, cheesy eggs touches a cord in my childhood heart of yesteryear. Sitting with my four siblings, “at the table”, momma in the kitchen… We were blessed with bacon or a sausage patty on Sundays when Dad fed us.
He kept deli sandwich fixings in ‘his drawer’ for work so, when
I started buying much of my own food when I was 14-15, I gave up egg sandwiches for a couple slices of turkey, when I could barely afford it. Made me feel grown up Otherwise, peanut butter held me down.
Went back to eggs sandwiches in my late teens and 20’s.
Fixed western omelets for a few years in my 30’s, then began wrapping those into a tortilla shell with a healthy portion of salsa, never leaving the cheese! I’m with you on that front, Donna W.!
I hadn’t had eggs on my plate for about 25-30 years, I guess.

As I have grown into late middle age, I find my tastes are changing as well as my appetite. One of my first memories was waking up to the kitchen light on at about 3:30 am. My beloved granddaddy would be eating fried eggs with Texas Pete, supping coffee out of a saucer and he would always get my eggs scrambled and put ketchup on mine so I could be like him. Lately, I have been eating a 1 egg half sandwich with, of course, mayonnaise and ketchup for a brunch around 10 or so. (I’ve no appetite at dawn.) My sweetest memory revolves around eggs. Then occasionally we would ride out to a big chicken farm where grandmother ( my mommy) gathered her own fresh eggs. While she did that, my little sister and me would run in and out of the big chicken house talking to the chickens and petting them too. It was great fun. The Bible says we long to give our children good gifts and further states who would give their child a snake when he asked for an egg? So too the Father gives us only good gifts. I always wanted me some PURTY PURTY Rhode Island Reds…
I love eggs just about any way they can be fixed.
Never thot of it like that before but to describe eggs like that, a blanket. My late husband would scramble them into tiny tiny bits. I didn’t care for that but ate them anyway. But, never had them on bread.
Now, fried egg sandwich, yum. The whole egg-sunny side up between 2 mayo covered slices was a nice change up for brkf, early lunch or even supper & a tasty mess. Have always broken the yolk before the second slice for damage control purposes with a dash of salt atop.
I like my scrambled eggs snuggled up to some crispy fried taters on one side and a couple of peppery sausage patties on the other then covered with hot a blanket of sausage gravy. If the plate is big enough and everybody can scrooch in close enough there might be enough room for a split biscuit to get inunder the blanket too.

Like many have already commented, I too love scrambled eggs. On toast, with bacon and cheddar cheese, they make a great sandwich.
I love fluffy blankets of scrambled eggs on buttered whole wheat bread with honey – YUM.
I like hot sauce on mine too, especially Franks hot sauce
it’s hard to beat eggs and bacon for supper. During the winter on a cold, wet, dreary day I often will get the craving for bacon and eggs. it’s just good comfort food.
We love scrambled egg sandwiches with lots of mayonnaise. They are my “go to” for when I want to make a quick and easy supper – which is fairly often 🙂 I am going to do Matt’s version of mixing the mayo in before putting them on the bread.
I love eggs, I love all kinds of eggs, I eat a lot of eggs! I eat them boiled, scrambled and though it’s not my favorite I will even eat poached eggs. I love eggs for any meal! I like Paul’s distinction between the scramble eggs being in little pieces or one big blanket, it doesn’t matter to me, I like them all!
I like my eggs scrambled in bigger pieces too and make my sandwich with bread, mayonnaise, and a little bit of mustard.
Omgosh we loved hearing you baby story last night (or babies story that is.) I was amazed when you told of the blood blister you had on your thumb. I’ve never heard anyone else tell of that but I too had one of those on the side, of my left, middle finger. I had no clue where it came from and had to have it removed, 5 days after I gave birth to my first baby. It was right on the bend, of the last digit, had twelve tiny stitches holdin it closed, which made my finger look like half of it had bn cut off. My husband took our 5 day old son back to the doc, for his baby check up, the day I went to have this removed, thinking it was gonna be no big deal. I was so sick seeing how much of my finger was missin, and still had to drive myself home. It throbbed and throbbed for days on end. I could barely hold my son for fear of droppin him from handling him one handed. I remember tellin everyone “this was way worse than labor, labor lasted 10 hrs this has lasted 7 days!” Anyway, I never heard of anyone havin that until now, so do you think it had to do with our pregnancies? And what a bond spouses form when they experience the birthing process, right. Matt in his quiet, strength (and almost embarrassed at times,) and you in your beautiful gentleness, truly, you look as one! Thank you for sharing that beautiful story with us! PS scrambled eggs are definitely a comfort food, especially when my husband put a slice of Kraft cheese in them, tearing the cheese slice into tiny PCs and then stirring them until it melts in, (like he did when we were first married!)
Lorie-thank you! Yes they told me it developed because I was pregnant. I probable got a small cut and since I was pregnant my body went into overdrive and sent way too many resources to fix it resulting in a build up stuff around the cut 🙂 Yours sound much worse than mine was. I didn’t have to have any stitches.
My husband and I keep tortillas around just for scrambled eggs, so we can have breakfast burritos. I heat the burritos, but cheese on them, and spoon the hot scrambled eggs on top of the cheese, then folding them up after adding hot sauce. We got the idea long ago from McDonalds, but ours are much, much better… and bigger, since we use two eggs in each burrito. Sometimes I add some chopped onion or cooked sausage.
I like scrambled eggs the best but fried egg sandwiches along with bacon are both good. I do not toast my bread. The only real requirement for me when it comes to eggs is that they be well cooked -done, no half raw runny yellows for me. Nowadays the chickens and not the goose are laying the gold eggs, I keep looking for gold nuggets when I crack open the eggs.

That Deer Hunter just figured out how to make a quick egg salad sandwich without boiling, cooling and peeling the eggs! He doesn’t have time for all that.

I love egg sandwiches! Daddy took them most days to work. I eat them like you, but I also eat mine with a smear of peanut butter and cheese with ketchup on toasted light bread. Weird combination, but tasty for a change!

Put some sour kraut with your eggs and mix them together with a wire whip. Delicious – you won’t know the kraut is there, but it adds fiber, Vitamin C and enhances the already good flavor.

I love Paul’s comment about scrambled eggs. my sister called them scribbled eggs when she was little. I like mine on soft bread any color with mayonnaise. I like the eggs softly scrambled too with a touch of milk
I do eggs without the yolk, cholesterol is not good for me, with mayo on toasted texas toast…yummy. Loved the layed-back Deer Hunter’s take on last nites blog. Doesn’t seem to get excited, but I bet landing a deer does. God Bless
