
Corie taught me to make the best carrot salad. It’s quick, easy, and so good I can’t get enough of it!
Carrot Salad
- 1 pound shredded carrots
- 1/3 cup olive oil
- 1 tablespoon honey
- 1/2 teaspoon ground corriander
- 1 garlic clove minced
- 2 tablespoons apple cider vinegar
- salt and pepper to taste
Mix it all together and let it marry in the fridge a little while. Most of the time I can’t bear to wait and eat it as soon as I get it made.
The salad goes well as a side dish with about any meal. I’ve been trying to keep a bowl at the ready in the refrigerator but we eat it up so fast that it’s hard to do.

The salad looks yummy! Bummer! Im not coming g to NC until the week of the 18th! I love your cookbook! I have bought a couple for my sisters and myself. I plan on visiting the folkschool as a day trip from my the cabin I am renting in Mars hill.

Our Wendy Helen was born yesterday at 7:30 am. She is 7 lb. 9 oz. and 21 1/2
She is healthy and just so pretty! She was born at home with our midwife assisting and it was a fast labor. Thank you all for your prayers! God has been so good to us!
I will keep praying for all here. I am so thankfully for this community. God’s love runs through it all.
