One of my friends at work shared this easy peasy recipe with me. She said it was perfect when you needed a dessert but didn’t have much time to make one.

Cinnamon Cake

  • 1 box yellow cake mix
  • 4 eggs
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup sour cream
  • 1 cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 2 cups powdered sugar
  • 3 tablespoons milk

Preheat the oven to 325°F. Grease a 9 x 13 pan.

Add cake mix, eggs, oil, vanilla, and sour cream to a bowl and mix well for about 2 minutes.

Pour batter into greased pan.

Mix brown sugar and cinnamon together. Sprinkle mixture evenly over cake batter. Use a case knife to swirl the cinnamon/sugar mixture through the cake.

Bake for 35 to 40 minutes or till done.

Cool cake for about 10 to 15 minutes.

Mix together powdered sugar and milk and pour over cake.

Enjoy! So good with a glass of cold milk. I’m sure it would be equally good with a cup of hot coffee.

  2. I’ve been trying to increase my cinnamon, turmeric, and celery seed consumption to reduce various inflammatory conditions – if the sugar and the flour in the ingredients don’t interfere too much, maybe this would be a good way to get more cinnamon. – I know wishful thinking –
    By the way, if you don’t have a cake mix, try a scratch recipe such as 2 1/2 cup cake flour, 1 1/4 tsp baking powder, 1/4 tsp baking soda, 3/4 tsp salt, 1 3/4 cup sugar, maybe1/2 stick butter and a little buttermilk, then use the other ingredients (eggs on down) – I haven’t tried it, but it should work – all you’ll miss is the preservatives in the mix! Maybe you have a scratch recipe you like – just use the dry ingredients for the cake and go from there.

    I would want to chop up a cup of pecans and add to the cinnamon and brown sugar mix; maybe,then go easy on the powered sugar icing…that is unless, I decided to add some margarine, melted, then the powdered sugar, then the milk to the right consistency….especially if I was thinking it needed more calories to round it up to ten gazillion…lol

    1. Forgot to say….Thanks for the recipe…I’ve already looked…I have one yellow cake mix, left over from a cake box sale…need to use soon…but No eggs…No sour cream…No light brown sugar only dark…And a smidgeon of powdered sugar…Lots of pecans in the freezer…Still going to try this recipe….

    That cake looks so good and I’ve got all the items except a box of yellow cake mix. I’ll pick up a box soon as I get to Ingles. There ain’t no grocery store other than the one mentioned in our town. We need more to create competition again.

  7. Anytime cinnamon and brown sugar get mentioned I tend to notice. Sounds like a good muffin recipe to. I would want to involve some apples somehow. Sure one tablespoon of cinnamon is enough?
